Oh my goodness, these baked avocado fries look amazing! I have an obsession with avocados…I go through at least 2-3 each week for lunch on my sandwiches and salads (which I mostly eat just so I can top them with avocado), and if a menu item has avocado on it, I’ll pretty much always order it. This recipe seems really simple to pull off, too. Just slice some avocados, coat with Japanese bread crumbs, season, and bake. Kim and I actually just started a potluck style movie night with some of our girlfriends, and I think these will have to be the next thing I bring!
